Breakfast egg muffins
🍏 Start the day with eggs to keep you fuelled until lunchtime.
Makes 6
6 eggs - whisked 
Ham, chopped 
Grated cheese or feta 
Spring onions, sweetcorn 
Whatever you fancy adding really!
1️⃣ Preheat oven to 180C 
2️⃣ Ensure muffin tins are non-stick and spray with a coating of oil or use muffin cases. Pour the egg mixture into the holes 3/4 of the way up. 
3️⃣ Add ham, cheese, veg etc 
4️⃣ Bake for 15/20 mins and allow to cool in the tin first before removing. 
 
 Enjoy them cold or heat them up in the microwave for 10-15 seconds.
